1 bunch fresh asparagus
2 tbsp. extra virgin olive oil (for grilling)
Pasta for four (16 oz)
Lemon flavoured extra virgin olive oil (for drizzling)
Parmigiano Reggiano cheese
Salt and pepper
Preheat grill on high, direct heat.
Prepare the asparagus by breaking or cutting off any tough bottom ends.
Place the asparagus in a pan. Coat them with extra virgin olive oil and sprinkle salt over them.
Cook the pasta according to the package instructions.
Grill the asparagus for 5-10 minutes, until nicely charred and just fork tender, turning them every few minutes so that they brown relatively evenly.
When both pasta and asparagus are ready, serve in warm bowls, sprinkle with freshly shredded Parmigiano Reggiano cheese and drizzle with lemon flavoured extra virgin olive oil.
Salt and pepper to taste.
