Beef Tartare with a Caesar Twist

Ingredients

1 tempered egg yolk

2 tbsp. pepper and lemon mustard

3/4 cup Arbequina olive oil 1

1/2 lemon The zest and juice of 1/2 lemon

1 lb finely chopped garlic clove

1 finely chopped anchovy fillet

1/4 cup finely grated fresh parmesan cheese

to taste pepper

*** Fried capers (ingredients)

1/4 cup well-drained and dried capers

2 cups Canola oil, for frying

*** Tartare (ingredients)

300g beef (inside round)

1/4 cup cooked bacon
-
A few fresh parmesan shavings
Preparation

1. Caesar Dressing (preparation) In a bowl, combine the egg yolk, lemon zest and juice, and mustard and whisk together. Add the olive oil in a thin stream, whisking continuously until the mayonnaise thickens. Add the Parmesan cheese, anchovy, garlic, and pepper.

2. Fried Capers (Preparation) In a saucepan, heat 1 inch of oil. Line a plate with paper towels. Fry the capers in the oil until crisp. Drain on paper towels.

3. Tartare (preparation) On a work surface, using a sharp knife, cut the beef into small cubes. Add the bacon and Caesar dressing to taste. Garnish with Parmesan shavings and fried capers. Serve with croutons. Enjoy!
