Vinegar produced by acetification with Pedro-Ximenez wine aged for years according to the traditional Soleras and Criaderas method.
Slightly sweet due to its aging with Pedro Ximénez wine. It is the sweetest of sherry vinegars this with a sweet and sour taste and notes of candied fruit.

It goes particularly well with sweet and sour dishes and can be used in more full-bodied dishes. It is perfect for caramelizing onions. Thanks to its organoleptic characteristics, Pedro Ximénez Reserve Vinegar goes particularly well with meat dishes, cheese-based salads, discounts and desserts.
