Extra Virgin Olive Oil Mayonnaise
Ingredients

1 egg

500 ml (2 cups) extra virgin olive oil

5 ml (1 tsp) white wine vinegar

Salt
Preparation

1. In a bowl, mix the egg slowly for 20 seconds. Add vinegar.

2. Drizzle olive oil slowly on the side of bowl while continuing mixing. Add salt.

3. * Choose an extra virgin oil with a light fruity taste as opposed to a herbaceous one in order to prevent the bitter taste of the olive.
