Lemon Green Olive Chicken
Ingredients

1 (2-3 lb) whole chicken, cut into pieces

45 ml (3 tbsp) extra virgin olive oil O&O 8

2 onions, chopped

3 ml (1/2 tsp) ground ginger

3 ml (1/2 tsp) de paprika

1 lemon, juiced

500 ml (2 cups) water

Salt to taste
Preparation

1. Heat extra virgin olive oil in a large sauté pan. Add onions and sprinkle with ginger and paprika. Sauté until onions are golden. Add chicken pieces and cook until meat is lightly browned.

2. Add about 1 to 2 cups of water, lemon juice, salt, pepper, and olives. Cook about 1 hour, or until the chicken is tender.
