Olive Biscotti
Ingredients

3 cups all purpose flour

2 tsp. baking powder

1½ cups pitted and sliced black Empeltre and green Manzanilla olives

½ tsp. sea salt

2 tbsp chives, finely chopped

1 cup finely grated Parmagiano or Old Cheddar for a different taste

2 eggs
-
½ cup milk
Preparation

1. Preheat the oven to 325°F (160°C ). Line a 10'' x 10'' (20cm x 20cm) square tin with parchment paper. It is important to use a square tin.

2. In a large bowl mix the flour, baking powder, olives, salt, chives and grated cheese.

3. Make a well in the centre, add the eggs and milk. Mix very well to obtain a smooth dough mixture.

4. Transfer the mixture into the tin and press evenly to cover the base. . Bake for 30 minutes or until golden. Remove from the tin and set aside to cool slightly.

5. Line 3 large baking trays with parchment paper.

6. Slice the dough into 1/4'' (1cm) thick pieces with a serrated knife and place on the trays.

7. Bake for approximately 20 minutes or until biscotti are crisp and golden.

8. Transfer to wire racks to cool completely before serving.

9. Makes 40 biscotti.
