1 (2-3 lb) whole chicken, cut into pieces
3 tablespoons extra virgin olive oil - Boromeo
2 onions, chopped
½ tsp. ground ginger
½ tsp. paprika
1 can of O&O lemon flavord olives
1 lemon, juiced
2 cups water
Salt to taste
Ground black pepper to taste
Heat extra virgin olive oil in a large sauté pan. Add onions and sprinkle with ginger and paprika. Sauté until onions are golden. Add chicken pieces and cook until meat is lightly browned.
Add about 1 to 2 cups of water, lemon juice, salt, pepper, and olives. Cook about 1 hour, or until the chicken is tender.
